Vegetable Lasagna


9 low carb lasagna noodles
3 c. marinara sauce
1 c. mozzarella cheese, shredded
1/2 c. parmesan cheese
2 c. shredded carrots
2 c. chopped zucchini
1 c. low fat cottage cheese
1 egg, beaten



Mix cottage cheese, egg, and parmesan cheese.
Stir in vegetables. Alternate layers of noodles,
vegetable mixture, and sauce. Top with mozzarella.
Bake, covered, at 400 degrees for 35 minutes.
Uncover and bake 5 to 10 more minutes.
